The first release in the Sinclair series, named after Tobermory Distillery’s founder John Sinclair, is a heavily peated spirit matured in ex-bourbon casks and finished in Rioja wine casks. Nose – Smoke, raspberry jam, mint, farmyard. A glass of Pimm’s in a field. Palate – Juicy, sweet and soft. Jellies with a hint of roasted meats. Finish – A soft, elegant, ashy peat style. Long finish with burnt wood and caramel lingering.
